SANCERRE BLANC / WHITE WINE Domaine Henry Natter
Characteristics
Surface area in production: 17+ hectares (42+ acres) Average age of vines: 25+ years Grape variety: 100% Sauvignon Blanc Sanitary state of the crop: Very good due to the continuation of photosynthesis right up to harvest time. Harvest date: At optimal maturity for each vintage. Harvest: Manual and mechanical. Vinification and aging: Careful pressing followed by fermentation in large oak barrels (approximately 50 hectoliter capacity). Maturation: 6 to 9 months until mature, then storage in stainless steel vats.
At Your Table
Serve: As an aperitif, cool but not chilled, 10° to 12° C (50° to 54° F). Meal suggestions : Seafood, fish dishes (steamed, grilled or in sauce), shellfish, crab, filet of sole in Sancerre wine… Excellent served with Sancerre's local goat cheese "Crottin de Chavignol" as well as with other French goat cheeses.
